Ali’s Amazing and Fantastic White Chocolate and Raspberry Cheesecake Recipe
How this is gonna go down:
OREOS. Bet you were expecting some lame shortbread or digestive biscuit base? Yeah, too bad. Oreos baby. You’re gonna need 200 grams of these bad boys. For Americans out there, that equates to roughly “go buy a set of scales I’m fed up reading recipes in cups”. Throw these into a plastic bag and bash them to a fine, fine powder using a rolling pin. If that sounds like too much hard work (pro tip: it is) get the food processor out. Does the job a lot easier. Once that’s done…
75g of Butter. I don’t want any lame lowlow or “I can’t believe it’s not butter” or butter flavoured frylite or whatever here. Go fat or go home. And for Americans out there, that’s roughly “I’m being serious go get a set of scales”. Bang it in the microwave until it’s melted (20 seconds, check and stir, another 10, etc), then fire it in with your biscuits. The butter is the warm, gooey goodness holding those Oreos oh so close. Put it in the bottom of a dish thusly
… and flatten it down. Literally no idea how big that dish is. If I had to guess, 20cm. Make sure it’s not too thick, not too thin. It should even itself out, it’s good that way. Once you’re done, bang it in the fridge to harden. While that’s happening, let’s get to the good stuff
CHOCOLATE. If you want to make this a good cheesecake, get tesco value chocoLOL JUST KIDDING DO NOT SKIMP ON THE CHOCOLATE. You get the good stuff, ya hear? DO NOT SKIMP ON THE CHOCOLATE. Here endeth the lesson. Break up 300g of this sweet ambrosia into a bowl and warm it over some water, all gentle like, until it melts. Don’t burn it. No seriously. Meanwhile, the cheese
Soft cheese (Philadelphia) and mascarpone. 250g of each. For any Americans still with us, you know how this goes by now. Scales. Walmart, seriously. Dump it in a big bowl and stir gently til it’s relatively well blended. You don’t need to go all psycho on it, the gentler the better. Next…
Double cream. You can do what I did and go with the extra thick stuff, it means the end product holds its shape a little better, or you can get the regular stuff, which means it’ll spread better. 6 of one, half a dozen of the other. Your call. Gonna need 284ml of this. The extra thick stuff is hard to measure out in this fashion. Throw it into the bowl with the cheese and blend…
…but FOR THE LOVE OF ALL THAT IS GOOD GO GENTLE. You do not want to over-beat this or you cheesecake will have the WORST texture at the end of all this. Mix it JUST enough.
Done. ish. Wait until it’s all melted obviously. Then, bung it in with the cheese, ALL GENTLE LIKE
Gently bring it all together with your implement of choice. If you used the extra thick double cream, it’ll look pretty solid at this point. If not… a bit more fluid like I said 6 one half dozen other. Go retrieve your base from the fridge and get the raspberries
This is what makes it healthy. 200g-ish of these. Arrange a load (no need for specifics) on the base like so
And then spoon your chocolatey, cheesy goodness over the top
Add more raspberries and another layer of cheese, then top with raspberries like so
And there you have it. OR DO WE?!?
DARK GINGER CHOCOLATE BABY! For extra “wow”, grate this over the top. No seriously, it’s goood.
